Kale Chips

I'm not reinventing the wheel with kale chips but I needed something to do with my half-wilted kale. The thought of tossing it in the trash made me sad so I knew I had one of three options. One was to cut the stems and soak the entire leaf in cold water to revive the greens, juice the kale or make kale chips! So I went with kale chips since I love them and frankly, buying pre-made kale chips feels like you have just been held at gun point by some black market kale chip thug. Kale chip eaters know what I am talking about.


To be honest, the taste of kale is pretty gross. It very "green" and "earthy" tasting and the texture is like eating a sheet of loose-leaf paper. I don't believe that anyone truly likes the taste of just kale. I just don't buy. But I, like many others, choose to suffer through it because the health benefits are so extensive. And of course I load tons of other things on my kale to make it taste, well, like anything else but kale. Thus Garlic & Onion Kale Chips were born.


Garlic & Onion Kale Chips

2 heads of kale, stems removed, torn into pieces

2tbs any high heat tolerant oil -- I used safflower oil

garlic powder

onion powder

sea salt




* Pre-heat over to 350

1. Place the kale pieces in a bowl and toss with the oil

2. sprinkle on a generous portion of both garlic & onion powder (I like to use the powder instead of the real thing since we are talking chips here and frankly getting a chunk of semi-cooked garlic in your mouth is not pleasant)

3. Lay the kale leaves onto cooking spray coated baking sheets so the leaves are as far apart as possible. If some of the leaves are touching that's ok

4. Bake in the oven for 20-30 minutes depending on the heat of you oven. If you are unsure if the chips are done open the oven and give one a touch. If it is crispy, it's done

5. Remove from oven, add a pinch of sea salt and serve immediately.... or keep them around for snacking throughout the week

Ally has this new funny habit of squeezing himself into small spaces and hiding from Mommy. Yesterday morning I was searching frantically for him and finally found him squeezed between the couch and the side table reading a book about William Wallace! Boys!!
