Ginger Spice Broth & Buckwheat Noodle Soup

What is it about this funny lookin' root that makes me so completely happy. The simple pure smell of ginger instantly lifts my mood andI love it when my hands still smell of ginger for the rest of the day. 

 This soup is filling, warms the soul and will help cure anything that ails you.  Maybe it's the buckwheat noodles, maybe it's the earthy shiitake mushrooms but my guess is that it's the gorgeous ginger broth. Divine.

 

Ginger Spice Broth Buckwheat Noodle Soup:

1 liter low sodium vegetable broth 

4 shiitake mushrooms - cut into strips

1 bunch scallions - cup into little medallions

Handful of sweet peas

1 carrot - shaved into strips

1 pack of buckwheat noodles

1 thumb size chunk of fresh ginger - peeled, zested 

2tbsp liquid aminos

2 garlic cloves - minced

 


1. Boil buckwheat noodles in lightly salted water until tender. strain and run over cold water to stop from cooking. Put desired noodle amount in each bowl ( I find that one pack of soba noodles nicely feeds two fatty's like me.)

2. Bring vegetable broth to a boil and add all the ingredients. 

3. Let simmer for 10 to 15 minutes. 

4. Pour broth over noodles and serve immediately.
