Zucchini Bread with Strawberry Yogurt Topping

Today it was unseasonably warm. Almost 70 degrees! Although it was a gorgeous day and I really shouldn't complain I was so hot. I just can't seem to lower my body temperature these days. This weekend it will be back in the 30's and I cannot wait. Speaking of this weekend... not only is it my 30th birthday but my last baby shower and my best friend since I was 4 is coming in town along with my parents. AND... February 5 I am officially full term. Needless to say I am very excited for the days to come.



I thought the best thing to accompany this beautiful day was a light zucchini bread with strawberry yogurt sauce and the Indigo Girls 1200 Curfews album. 1200 Curfews was literally my high school anthem. I felt like I was transported back to 2000 driving around in my silver beetle listening to "Least Complicated." I was singing and dancing around the house with all the windows up. It was one of those incredible days you spend doing exactly what you want to do without a care in the world.


Zucchini Bread

Makes: 1 large load or 2 small loaves

1 1/2c whole wheat flour

2 eggs

1 1/2tsp vanilla extract

1/4c coconut oil 

1 1/2tsp cinnamon

1/4tsp salt

1/4tsp baking powder

1/4tsp baking soda

3/4c brown sugar, packed

1/4c walnuts, chopped very small, chopped fine

2c zucchini, shredded - about 2 zucchini's worth








1. Pre-heat oven to 350.

2. Lightly grease the bread tin(s).

3.  Mix together the flour, sugar, baking soda, baking powder, walnuts salt & cinnamon.

4. In a separate mix together vanilla and eggs.

5. Combine the two bowls.

6. Add in the zucchini and mix well.

7. Add to mix to tin(s). 

8. Cook for 40-45 minutes. If you are unsure if it is cooked stick a toothpick through the middle. If it comes out clean, it's done.






Strawberry Yogurt Topping

3c fresh strawberries, tops removed

2tbsp honey

Juice of one lemon

1c full fat plain yogurt, regular or greek





1. Combine strawberries, honey and lemon in a food processor and pulse together. Make sure to leave some hunks of strawberry for texture. 

2. Transfer mix to a jar or serving bowl, add the yogurt and stir.

3. Once the zucchini bread is finished remove from the oven and let it cool.



Serve with the strawberry yogurt sauce.
