Dirty Morning Eggys
Saturday morning breakfast is my absolute favorite. I always have leftovers from the week before and hate to see them go to waste. What better way to use your left over than frying them with cheese and eggs.
This morning I had a batch of unused brussel sprouts and colorful potatoes.
Dirty Morning Eggys
Serves: 2
4 eggs (2 a person)
shaved parmesan cheese (as much or little as you like)
2 handfuls brussel sprouts, lightly blanched
2 handfuls potatoes, boiled slightly
1 garlic clove, minced
1tbsp salted butter
Splash of milk
Sea salt / Pepper
1. Mix together egg, garlic and milk.
2. Add a big pinch of salt and pepper.
3. In a large skillet add butter to melt. Once melted add eggs, brussel sprouts & potatoes.
4. Allow to simmer together for about a minute. Add cheese and mix until eggs are completely cooked. Yum!
