Shrimpys' in a Coat
Hello beautiful souls! Once again I have been neglecting my recipe posting and for good reason. My little family has some big news!.... (drum roll please)...... we are moving to NYC!! Yes we are packing up our yoga mats and juicer, selling our house and cars and heading to Manhattan. My husband was offered the Head of Sales position at Daily Muse located in NYC. Doug grew up around the NYC area and I, as you know, grew up in northeast Cleveland so living in a big city is a huge change for me but one that is welcomed. Ally will be a NYC baby and he. is. thrilled! Doug has already begun work so Ally and I have been manning the house, packing up and cleaning out.
Ally has been a huge help with all the packing and cleaning! Ally has been popping all the bubble wrap and unpacking the boxes right after I pack them. Oh this boy!
A few updates on the little man of the house... he is full-on walking(!) and trying to run which is hilarious. He learned how to open his own bedroom door from his crib which is a bit freaky when you wake and 3am to use the bathroom and see a little head poking out of the crib followed by a "hiiiiiieeeeee" in the cutest little baby voice. Yes he says a few words as well.. "hhiiieeeee" being his favorite.
With the start of spring brings my favorite holiday. Easter. Doug thinks it's odd that Easter is my favorite but I love the symbolism of it. Growing up in my family Easter was all about family, good food and beautiful flowers. We would go to church on Easter Sunday and the church would be filled with fresh flowers. Then we would all congregate at my Grandma Nan's house for Easter brunch of leg of lamb, roasted potatoes and green beans (which my mom and I will be making together this Easter Sunday).
As our lives twist, turn and change tradition becomes even more important. It reminds me of my roots and loved ones who have pasted as well as celebrating my growing family. Also, it is no accident that Easter is celebrated right at the beginning of spring. It is a time for rebirth (literally and figuratively) for your mind, body, and soul as well for mother nature. Plus, the colors, jelly beans, and festive decorative eggs are lots of fun. For these reasons, Easter is my favorite holiday.
Hosting friends and family for Easter (or any holiday) can be stressful. Shrimp's in a Coat is a delicious starter that will surely be a crowd pleaser. Plus you can make this ahead of time so you are not in the kitchen the whole time.
Shrimp's in a Coat:
Serves: 8-10
*Shrimps can be wrapped the morning before guests arrive
40-50 medium size raw shrimp, shelled, tail-on or off
1 pack egg roll wrappers (I bought mine in the vegan section of WholeFoods)
Pinch of Sea salt
1tbsp olive oil
Hot mustard, soy sauce, duck sauce or any other sauce of choice for dipping
Process:
1. Pre-heat the over to 350 degrees
2. Rinse the raw shrimp in cool water and pat dry. Sprinkle a with sea salt
3. Cut the wrappers in the fourths cross-wise making four triangles
4. Start with the shrimp at the small end of the wrapper roll the shrimps lengthwise one at a time
5. Set the rolled shrimp in an olive oil coated baking pan making sure that the shrimps are not touching each other (I rolled mine ahead of time so the picture shows them stacked on parchment paper. This is not needed for baking).
6. Bake in the oven for 10-15 minutes until the wrap is crispy and the shrimp is cooked
Serve immediately with dipping sauce of your choice. Enjoy!
