Caper Butter Potato Salad

Caper Butter Potato Salad

Serves: 4

2lbs red skin potatoes

1/4c olive oil

3tbsp butter

1/4c small capers

2 cloves garlic, minced

1tbsp salt

1tbsp pepper

Chives, chopped (optional)

 

 

Method:

1. Pre-heat oven to 350

2. Rinse potatoes and cut into quarters.

3. In a large bowl toss together the potatoes, olive oil and garlic .

4. Add potatoes to nonstick oven safe pan.

5. Cook for 30-40 minutes until potatoes are browned and cooked through.

6. Once cooked remove potatoes and transfer to large serving dish. Immediately add butter, capers, salt & pepper. 

7. Top with chives (optional) and serve.
