Soba Noodles with Toasted Sesame Dressing

This is my last post before Dougie, and I make our way to the Vineyard. Siggghhh.. This beautiful island is my favorite place on the entire planet. My parents have been coming to Martha's Vineyard for over 35 years, and every year summer is better than the last.


I have a mountain of memories made on this island, riding the Fly Horses, swimming in Seth's Pond, eating pies from the Scottish Bake House, jumping off the pilings at the ECBC, so many memories to cherish.

Another reason I love this island is that change is slow here. I can always count on seeing the raft at the beach club, still being creeped out by the "black spot" near the raft where the old anchor from the raft still sits, he ocean debris still hanging on the wall in our home exactly how we left it the year before, the sound of the bell buoy at night, apple fritters from the Old Stone Bakery, walks to the bluff, cocktails on the porch and lobster, lots and lots of lobster!

The mark of our annual trip to Martha's Vineyard is also a reminder that summer is soon over. So, before I hang up my swimsuit and trade in my breezy summer dresses for wool trousers I'm going to indulge in a few more tastes of summer.

Soba noodles with sesame seed dressing is just the ticket. Now, this can be a treat year round, but because the noodles are best served cold, it's makes for the perfect summer dish.

Soba Noodles with Toasted Seasame Dressing:

Serves: 4

1 package soba or buckwheat noodles

1 bunch scallions - roughly chopped

2 tsp honey (use agave for vegan option)

2 tsp rice vinegar

5 tsp liquid aminos

2 tsp toasted sesame oil

 

1. Mix together, toasted sesame oil, soy sauce, honey and vinegar. Whisk vigorously and set aside.

2. Bring noodles to a boil in salted water. Allow to cook all the way through (about 6-8 mins). Quickly drain the noodles and plunge into an ice bath to stop the noodles from cooking further.

3. Place drained noodles and place in a big colorful bowl, then cover with the toasted sesame dressing and scallions. Give the noodles a good toss.

I think the best way to eat these noodles in from a huge bowl on the porch. No manners necessary...
