It has been 19 days since my last post... and this is why...


Yes, I am one week away from my due date and extremely tired. Lately I have just enough strength to get out of bed, take a shower and then take a nap. Plus, I have been having a ton of Braxton Hicks which gives me false hope my boy is coming early but I think he's pretty happy where he is for now. So.. I will continue to wait until my boy is ready to join the world. Sigh.

At least I have the best napping partner ever...



To help pass the time I would get back to what I love, cooking. These  two dishes are simple, healthy side dishes or snacks. They are easy and fast to make... which is great for me since I don't have the time or energy to cook a lavish meal. Thankfully these two dishes are full of flavor without all the time and fuss.

Curly Zucchini Straws

Serves: 2

I bought this super fun vegetable curler and it has quickly become my new obsession. You can expect to see a ton more curled vegetables in the coming weeks. I highly suggest you pick one up.

2 whole medium zucchini's. ends cut off, spiraled or shaved with a vegetable peeler

1 garlic clove, minced

1/2c extra virgin olive oil

zest of one lemon, plus juice

sea salt / pepper



1. In a large skillet heat the olive oil and garlic over medium heat

2. Add the zucchini straws and lemon zest

3. Saute very fast. About 2-3 minutes

4. Remove from heat, coat with lemon juice and season with sea salt & pepper

5. Toss generously
